Tomatoes from the Garden: My favorite fall recipe!

Every spring we plant a vegetable garden filled with tomatoe plants, basil, lettuce, cucumbers and sometimes peppers.  This year we even tried planting some pumpkins (which I can't wait until they finish growing!).  But every year there's always plenty of tomatoes to go around.

Tomatoes were never my favorite vegetable to eat by themselves (or at all really). Of course I've always loved tomatoe sauce and ketchup (who doesn't right?). But that was always my extent of eating tomatoes, until about a year ago when I tried out this recipe, Rosemarry chicken and tomatoes. I'm a sucker for any dish with chicken so i was immediately interested. But as you can imagine, I wasn't so sure of the tomato part.

After we had plenty of fresh tomatoes from the garden and had made gallons of tomatoe sauce, it was time to do something else with them! When we finally decided to try out the dish, the result could not have been tastier. After making a few changes to the recipe, it's now one of my favorite dishes to eat in the fall.

If you'd rather serve it over egg noodles instead of rice, that'd be yummy too. And if you are using fresh tomatoes from the garden (which makes it even tastier) just boil them in water and peel off the skin to get your own "homemade" plum tomatoes.
